The Process Of Winemaking


Winemaking is a process that combines both art and science.

Generally, wine is made following five different steps.


Even though these five steps are essential for the whole winemaking process, oftentimes winemakers would add their own variations in order to give a unique touch to the wine.


Here are the five essential steps that are involved in the winemaking process.

  •          The First Step – Harvesting

Harvesting the grapes is the first step since it is the grapes that contain all of the needed tannins, acids, and esters in order to produce that delicious wine.


The process of harvesting can be done either by using machines or by hand.

  •          The Second Step – Crushing

After the grapes have been sorted in different bunches, the next step is to take off the stems and crush the grapes.


A lot of the winemakers prefer to do this process by using machines.


The mechanical presses used in the crushing process stomp or trod the grapes into something called ‘must’, which is basically just fresh grape juice.


The must is the end result of the crushing process, which consists of solids, skins, and seeds of the grapes.

Even though, winemakers prefer to harvest their grapes by hand, using machines for the crushing process has made the whole method more sanitary. Plus, it also helps in increasing the longevity and quality of the grapes.

 

  •          The Third Step – Fermentation

Once the crushing and pressing is done, the next step is the fermentation process. The grapes start fermenting within six to twelve hours once wild yeast is added into it.


However, a lot of the winemakers prefer adding cultured yeast into the must so they can ensure consistency and guess the end result.

The fermentation process goes on until all of the sugar has completely transformed into alcohol, which will produce dry wine as a result.


If the wine is supposed to be sweet, then the winemakers would halt the process in the middle in order to stop all of the sugar from converting.


The full fermentation process usually takes about seven days to a month, or even longer.

  •          The Fourth Step – Clarification

The next step is clarification where the filtration and fining process takes place.


In order to clarify the wine, other substances are added in the wine mixture for the fining process.


Certain winemakers incorporate clay to the wine mixture, which catches the unwanted particles and these particles are then taken to the bottom of the barrel or storage tank, for instance.

In order to catch the bigger particles during the filtration process, certain filters are used.


Once the clarification process has completed, the wine is then shifted to another tank. The next step is to prepare it for either aging or bottling.

  •          The Fifth Step – Aging Or Bottling

The last stage of the winemaking process is aging or bottling the wine.


The winemaker can either provide extra aging to the wine or they can instantly pour the wine into bottles.


When it comes to aging, the winemakers will then transfer the wine in either oak barrels or stainless steel tanks.


After the aging process is completed, that wine is poured into bottles and closed with a cork or screwcap.

  •          Basket Press Versus Pneumatic Press

However, today this process is done by using a pneumatic press, which is basically a cylinder that has an inflatable membrane inside it. This inflatable membrane is used to compress the grapes and the juice is extracted.

History of NJ Wineries

New Jersey seems to have a strong tradition of winemaking and winning winery awards since 1767. So, how did New Jersey's wine industry transformed from nothing to something?

Lord Stirling & Edward Antill


The British Royal Society offered £100 to any colonizer who will produce "acceptable quality" red or white wine in 1758, which meant that the wine had to be of the same quality as that acquired from France.


When no one who participated accepted the challenge, the prize was raised to £ 200, but instead, two New Jersey residents happened to come forward.

In 1767, William Alexander, better known as the self-proclaimed "Earl of Stirling" or "Lord Stirling," notified the Royal Society that he has already cultivated 2,100 vines in his property in Basking Ridge, central New Jersey, Somerset County.

Edward Antill, on the other hand, who inherited his father's estate and ran a massive brewery in Raritan Landing around the Raritan River in Piscataway Township, New Brunswick, told the Royal Society that he had 800 vineyards of Madeira, Burgundy and Frontenac grapes.


William Alexander and Edward Antill all prevailed in their attempts, and the Royal Society Committee accepted the recognition.

The Society proposed giving £ 200 to both people for their achievements. Nevertheless, the Society posed questions regarding the validity of Alexander's claim to a rank of nobility.


On 2 December 1767, the Society gave a cash reward to Antill, and three weeks later, it provided a gold medal to Lord Stirling for having cultivated 2100 vines in North America under the Views of the Society.'


Thus, the development of the wine industry in New Jersey had begun.


The advances in Antill and Lord Sterling have not culminated in long-term prosperity or the creation of state-owned industry.


Within several years of their passing, Antill in 1770, and Lord Sterling in 1783, their prize-winning vineyards were lost and deserted.


Throughout the colonial era and the early nineteenth century, Jersey cider and blended liquor became the main industry throughout New Jersey. During the 1840s, sparkling cider was being sold as 'champagne"! 

Renault Winery


In the mid-19th century, New Jersey was yet again known for its ability to grow grapes.


In 1859, an agriculture society was established in Egg Harbor City, and over 40 separate grape varieties were evaluated for regional cultivation. Grape varieties of Vitis aestivalis (known as the summer grape) and Vitis labrusca, including Concord, Catawba, Norton, and several others, had all been handpicked.


The early industry began with new German immigrants, and Gardener's Monthly stated in 1865 how these Germans were going to make wine as good as anywhere in the world.

Renault Winery, established in the Egg Harbor City region of Atlantic County in the southern part of the state, was founded in 1864 by French immigrant Louis Nicolas Renault.


In its early years, Renault Winery was recognized for its American version of "champagne."


It was New Jersey's first industrial winemaking project and still one of the oldest and largest wineries in The United States of America.

Vineland


Philadelphia property developer Charles K. Landis bought 20,000 acres of farmland in 1861 in Cumberland County near Millville, New Jersey, along the current railway line to Philadelphia, to establish his spirit-free perfect city, a "Temperance Area" focused on agriculture and progressive thought.


Landis claimed that he was about to construct a town and an agricultural and fruit-growing colony around what he was about to construct.


By 1865, the population had reached 5,500!

Landis realized the potential for grape growing and named the town "Vineland," and announced that he would attract Italian grape producers to Vineland, offering 20 acres of property to be cleared and used for grape development.


Moving to Vineland in 1865, clergyman, entrepreneur, and dentist Thomas Bramwell Welch, who invented the process of pasteurization of grape juice to avoid natural fermentation and wastage in 1869, bought locally produced grapes to produce "unfermented wine," otherwise known as "Grape Juice," selling it under the name of "Welch's Grape Juice.

'Landis' attempts to establish a non-alcoholic culture, Italian and German immigrants who resided in Vineland began making alcoholic wine in the 1870s.

Prohibition Era


Prohibition was a significant reform movement from the 1840s to the 1920s, which was promoted by Protestant Christian churches, particularly Methodists, Baptists, Presbyterians, Disciples, and Congregationalists.


Groups such as the Women's Christian Temperance Union, the Prohibition Party, and the Anti-Saloon League utilized intense pressure on politicians to achieve the goal of national restriction during the First World War, stressing the need to demolish political corruption, the political influence of the German-based brewing industry, and the urge to reduce domestic violence at home and claiming that alcohol had been the cause.

Even though primarily unsuccessful, the prohibition would have lasted 14 years and became extremely unpopular in the Roaring Twenties and the Great Depression.


The abolition movement pointed out the irony of Prohibition activists and politicians, the rise of organized crime, and how it jeopardized regard for the law.

Franklin Roosevelt and other politicians sought to put an end to the prohibition by seeking tax revenue and weakening the basis of organized crime.


They did so with the passing of the Twenty-first Amendment to the Constitution of the United States on 5 December 1933.


Under its principles, states were permitted to set down their own rules on alcohol regulation.

Renault Winery managed to make wine but cleverly put it on the market in drugstores and pharmacy as a medical "tonic" recommended by the doctor freely for disorders varying from pregnancy to insomnia.


The Krumm family's" Seaview Winery "in Linwood preferred to offer jellies, tonics, cooking wines, and brandy, which were allowed under the Prohibition's Volstead Act.


By the end of prohibition, the growing American wine industry had been severely damaged.

What hadn't yet survived the transmission of black rot, as well as other grape diseases, they had been heavily affected by the prohibition.


Only a few wineries were left by the end, and those had gone out of business as well! The era of prohibition in the 1970s had ended in 1974 when the last winery "Herman Kluxen" went out of business.
 

Rebirth of The Wine Industry


Wine development in the state remained limited until the 1980s when New Jersey started to loosen its laws and regulations surrounding the authorization and service of alcoholic liquor processing facilities.


Legislations that remained unrepealed just after the end of the Prohibition era managed to prevent the development of new wineries and restricted the licensing from one winery for every one million state residents.

In 1981, the state legislature enacted the New Jersey Farm Winery Act, consequently signed by Governor Brendan Byrne, which consisted of exempting low-volume family-owned wineries from prohibitions and enabling wineries to open up retail stores.


This act essentially enabled someone with a minimum of 3 acres and 1,200 vines to register for a winery license.

This act facilitated the rebirth of the wine industry in New Jersey. The provisions of the Farm Winery Act allowed its industry to grow from 7 wineries to 15, expanded the agricultural land of wine grapes, which resulted in the state becoming the nation's tenth biggest manufacturer of 204,000 gallons.

New Jersey placed sixth in the world in per capita wine use, with a record of 27,194,000 gallons consumed in 1986!


In 1999, New Jersey launched its Quality Wine Alliance (QWA) system based on specific robust criteria in Italy and France.


According to this method, a wine must be checked by an impartial advisory board consisting of qualified wine judges, wine publishers, wine producers, liquor store owners, and professional wine reviewers.

The industry has achieved a scale and prominence that render it a significant factor in the state’s rising agriculture and tourism industries.


Over the last couple of years or so, the number of wineries has more than doubled, from 22 in 2004 to much more than 50 in 2014.
